Exotic Veggies and Paneer stir Fry | Paneer stir fry | Paneer and Veggies in Chinese sauce

Ingredients

1 Onion (cut into big chunks)
1 Capsicum (cut into big chunks)
1/2 cup Broccoli (florets seperated)
1/2 Yellow Zucchini (cut into medium pieces)
1/2 Green Zucchini (cut into medium pieces)
100 gms Cottage Cheese (Paneer) (cut into small pieces)
5 Cherry tomatoes (Halved)
4 Garlic cloves (finely chopped)
1/2 inch piece of Ginger (finely chopped)
1 Green chilli (finely chopped)
3 tbsp Coriander (Kothmir)
1 tsp White Vinegar
1 tbsp Soya Sauce
2 tbsp Green Chilli Sauce
2 tbsp Tomato Sauce
1 tbsp Barbecue Sauce
2 tbsp Corn flour Slurry
1/4 tsp Black Pepper Powder
1/2 - 1 tsp Sugar
Salt
1/2 cup Water
2 tbsp Oil

My love for desi Chinese food is unending, but this lockdown has made it difficult for all of us to order from outside. Hence, I ve taken it up to perfect all my desi Chinese recipes so that I can enjoy all the deliciousness made right at home. Here is a one of my favourite recipes from that lot. Please note that you can change the veggies according to whatever is available to you. I just managed to get my hands on these veggies, but you can totally use whatever you have.

In a pan heat oil and add finely chopped ginger, garlic and green chilli. Saute for 2 mins.

Add Onion, capsicum, broccoli, zucchini and mix well. Cook until the veggies get slightly charred and become tender.

Add all the sauces, salt, black pepper powder and coriander. Mix well. Add Paneer and cheery tomatoes and mix well again.

Cook for two minutes and add 1/2 cup of water and let it simmer for 3-4 mins.

In a bowl mix together 2 tsp corn flour with 2 tsp water to make a corn flour slurry. Add this to the stir fry and mix well. This will make your sauce thicken almost instantaneously.

Add 1/2 tsp of sugar and cook for 2 more mins on medium flame. Garnish with coriander and serve hot alongside fried rice or noodles.
